Jamaican Summer Salad

Ingredients
1 large tomato
1 medium cucumber
1 small avocado
1 carrot
3 leaves of lettuce
1 slice pineapple (optional)
1 slice papaya (optional)
salt
black pepper

Directions
Dice tomato, cucumber and avocado, and combine in a bowl. Add a dash of salt and pepper. Cut carrot in thin strips and add to bowl. Next, add chopped lettuce leaves and diced pineapple and papaya to the bowl. Sprinkle olive oil or balsamic vinaigrette lightly over salad and toss with spoon. Enjoy!

Loaded Potato Salad

Ingredients
1 lB Of redskin potatoes diced into cubes with skin on
1 Dozen eggs boiled,and sliced
1 Red onion sliced
1 celery stalk sliced thin
1 jar of real bacon bits
about 4 tbs of mustard
1 quart of mayonaise
2 bags of shredded cheddar cheese

Directions
Boil diced potatoes and rinse with cold water, let cool. Boil eggs until done about 10 minutes, let cool and slice up. Put potatoes, eggs, onion, celery, bacon, mustard, and mayonnaise in a large bowl and mix all together. Add all cheeses, put in fridge until cool and enjoy.

Shrimp Salad

Ingredients
1 pound cooked shrimp
2 cups cooked macaroni pasta
1/2 cup finely chopped celery & green onions
1 cup mayonnaise
1/2 cup shrimp cocktail sauce
1 heaping TBSP tarter sauce
1 teaspoon of sweet relish
salt and pepper to taste

Directions
Cook pasta according to box directions. Combine all ingredients and chill until ready to serve. Prep time: 10 minutes. Cooking time: 10 minutes. Makes 4 side servings.

Yummy Strawberry Salad

Yummy Strawberry Salad
1 Head lettuce - torn
1 Head spinach - torn
1 cup Mozzarella - grated
Crazins
Honey roasted peanuts
1 can Mandarin oranges - drained
1 carton Strawberries - sliced - can use fresh peaches, apples, pears, asian pears, etc.
Brianna’s poppyseed dressing

Combine everything in a large bowl and toss with dressing before serving.

Pretzel salad

2 cups crushed pretzels
3/4 cup melted butter
2 tbsp. powdered sugar
1 (8 oz.) cream cheese
1 (8 oz.) Cool Whip
1 cup powdered sugar
1 large box of raspberry Jello
2 pkg. frozen raspberries

Mix together pretzels, melted butter and the 2 tablespoons of powdered sugar. Then press in 9 x 13 inch pan. Bake 10 minutes at 350 degrees. Cool.

Mix cream cheese, Cool Whip and 1 cup of powdered sugar; pour over pretzel crust.Dissolve large package of raspberry Jello in 2 cups boiling water. Add 2 packages of frozen raspberries not drained. Mix well and pour over cream cheese. Chill for a couple of hours.

Tuna Seaside Salad

Ingredients
1 pkg (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner
10 oz pkg. frozen peas, thawed, drained
1 can 6-1/8 oz.) tuna, drained, flaked
1 cup chopped celery
1 /2 cup MIRACLE WHIP Salad Dressing
1/4 cup sweet pickle relish, drained
2 Tbs finely chopped onion
2 Tbs chopped pimiento, drained

Directions
Prepare Dinner as directed on package.
Add remaining ingredients; mix well. Refrigerate. Add additional salad dressing before serving, if desired.

Heidi's salad

I made candied walnuts (brown the walnuts & then heat up a sugar/cinnamon/milk/salt/vanilla mixture) what to do with it?

I put them in a salad w/ chopped apples craisens, celery, spinach, romain hearts & iceburg lettuce. Then I made this salad dressing! LOL - it's so funny - it's 1/2 cup of mayo, 1/4 cup of BOYSENBERRY SYRUP a splash of lemon juice, two splashes of red wine vinegar and that made about the BEST salad I've EVER had - oh - I threw some grilled chicken in there (left overs from the other night!)

**Yep, just cleaning out my Word program of all the recipes stashed here and there.... obviously C/P directly from her e-mail.

Black bean and Corn salad

Black Bean and Corn Salad

Recipe Summary

Prep Time: 10 minutes
Inactive Prep Time: 15 minutes
Yield: 4 servings

1 can, 14 ounces, black beans, rinsed and drained
2 cups frozen corn kernels
1 small red bell pepper, seeded and chopped
1/2 red onion, chopped
1 1/2 teaspoons ground cumin, half a palm full
2 teaspoons hot sauce, just eyeball the amount (recommended: Tabasco)
1 lime, juiced
2 tablespoons vegetable or olive oil, eyeball it
Salt and pepper

Combine all ingredients in a bowl. Let stand at least 15 minutes for corn to fully defrost and flavors to combine, then toss and serve. The corn will also place a quick-chill on this easy side-salad as it defrosts -- no need to refrigerate!

Bacon Cauliflower salad

1 medium head cauliflower, broken into florets
1 pound sliced bacon, cooked and crumbled
1 cup cubed cheddar cheese
1 medium green pepper, chopped
1 medium onion, chopped
1 cup mayo
2-4 tsp sugar

Combine the cauliflower, bacon, cheese, green pepper and onion. Combine the mayo and sugar and spoon over cauliflower mixture and toss to coat. Cover and refrigerate for at least four hours before serving.

Zucchini Apple Salad

2 medium red apples, chopped
2 small zucchini, chopped
1/2 cup chopped walnuts
2/3 cup Italian Salad dressing

Toss the zucchini, apples, walnuts and salad dressing in a bowl. Serve immediately.

Chicken salad cups

1 package refrigerated pie pastry
2 cups diced cooked chicken
1 can unsweetened crushed pineapple
1/2 cup slivered almonds
1/2 cup chopped celery
1/2 cup shredded cheddar cheese
1/2 cup mayo
1/2 tsp salt
1/2 tsp paprika

Topping:
1/2 cup sour cream
1/4 cup mayo
1/2 cup shredded cheddar cheese

Cut each sheet of pie pastry into 4 1/2" rounds. Reroll scraps and cut out additional circles. Press pastry into bottom and up the sides of 14 ungreased muffin cups. Bake at 450 for 6-7 minutes or until golden brown. Cool on a wire rack.

In a bowl, combine chicken, pineapple, almonds, celery, cheese, mayo, salt and pepper. Refrigerate until chilled.

Just before serving, spoon two rounded tablespoons of chicken salad into each pastry cup. Make the topping and spoon over filling. Sprinkle with cheese.

**I wonder if you could use refrigerated biscuits instead of pie crust?

Cookie Salad

8 ounce cool whip
1 small package instant vanilla pudding
1 can crushed or tidbit pineapple, drained
2 cans mandarin oranges, drained
1 cup buttermilk
Mix all together. Just before serving crush and add 1 package Fudge Strip cookies

**Another confusing recipe... is it a salad... or is it a dessert?

Frog Eye Salad

In oil, salt, and water, boil one pkg Acini macaroni for 15-20 minutes. Drain and rinse in cold water. In pan, cook until thick:
1 1/2 cups sugar
1 Tbsp lemon juice
2 Tbsp flour
2 eggs, beaten
1 3/4 cup pineapple juice. Cool and pour over macaroni. Chill overnight.

Drain juices and add:
2 cans fruit cocktail
2 can mandarin oranges
1 can crushed pineapple
1 can tidbit pineapple
miniature marshmallows (optional)
Fold in 1 medium sized tub Cool Whip.

Makes a huge salad.

**Once upon a time, this was my favorite salad! I haven't eaten it for years!

Dump Salad

1 large container of cool whip
1 can pie filling (drained)
1 can eaglebrand milk
1/2 cup pecans.

Mix well and chill.

**I haven't the foggiest idea who gave me this salad... someone online. Anybody want to claim it? Has anyone actually made this? Is it good? Looks like straight sugar to me. I should try it.

And furthermore, is this a salad, or a dessert? Or both?

Oriental Coleslaw

1 pkg coleslaw
1 pkg slivered almonds (approx 2 ounces)
1 pkg sunflower seeds (approx 2 ounces)
1 pkg chicken flavored Ramen noodles

Broil almonds, sunflower seeds and ramen noodles at 350 for 10 minutes. Mix with coleslaw in a bowl.

For dressing: in seperate container mix 1/4 cup of oil, 1 tbsp sugar and the seasoning packet from the Ramen noodles. Mix into salad just before serving.

**Years ago, you could find this recipe at every family function! You don't see it that much anymore though.

Catalina Corn Chip Salad

1 bag of fritos
1 small bottle of Catalina dressing
2 cups cubed cheese
1 large tomato
1 green bell pepper
1 red bell pepper
1 small onion

Dice all vegetables, mix in dressing and add chips right before serving.

**According to my recipe, this was given to me from Denise. Thanks girlie! One of my favorite forgotten about salads!

Cranberry salad

2 cups ground cranberries
1/2 cup sugar
2 cups diced apples
3 cups mini marshmallows
1/4 tsp salt
1 cup whipped cream
1/2 cup seedless grapes

Combine cranberries and sugar. Cover and refrigerate overnight. Add apples, marshmallows, salt and grapes. Fold in whipped cream. Chill and serve.

**It's been ten years this Christmas since I made this salad the last time, and I remember it was SO good... I'm glad I'm cleaning out the cabinet and finding all these treasures.

Nephi Salad

1 large package orange jello
1 large package of lemon cook and serve pudding

Mix orange jello according to package directions (I use whatever flavor of jello I have on hand). Put in fridge while you prepare the pudding. Cook according to directions on package. Mix with the jello until smooth, and let set in baking dish.

Topping:
1 small package of instant lemon pudding
1/2 cup milk
1-8 ounce tub of cool whip
2 tsp powdered sugar.

Mix ingredients together until well blended and spread on top of salad.

**My sister sent me this recipe in March 2005. She wrote in her e-mail... "a friend of mine passed along this jell-o recipe that was served at a dinner after his brothers funeral. Sounds good." And it IS good. High in calories, but quite tasty, and different than your normal jello salad.

Heavenly Rice-Chicken Salad

2 cups chicken, cooked and cubed
1 13 ounce can pineapple tidbits, drained (save 1 Tbsp)
1/2 cup diced celery
1/2 cup cashews
1 cup green grapes, cut in half
1 1/2 cups cooked and cooled rice with 1 Tbsp pineapple juice mixed in)

Mix it all together and add the sauce before serving...

1/2 tsp curry
1/2 tsp salt
1/2 tsp pepper
3 tsp sugar
1 cup mayo
1 tbsp lemon juice
1 tsp grated onion

Serve on Croissants!

**I've never tried this recipe, but it's in my pile to be organized... I found it on the back of a visiting teaching message from February 2006. I kept it because I LOVE chicken salad. Now that I know where it's at, I can try it.
