Chunky Cheese crock pot chicken

Chunky Cheese Crock Pot Chicken

6 Boneless skinless chicken breasts - chunked (cut in cubes)
1 Stick butter - melted
½ package Dry Italian dressing mix

Place chicken in crock pot and top with butter and dressing mix. Cook on low for 4 hours.

Add:
8 oz package Cream cheese - chunked
1 can Cream of chicken soup

Continue cooking in crock pot on low stirring occasionally until everything melts together, usually about 1/2 hour. Serve over rice.

Portia's BBQ Roast Beef

1 cup chili sauce or salsa
1/2 cup chopped onion
1/2 cup ketchup
1/2 tsp. paprika
2 tsp vinegar
1/2 tsp worchestershire sauce
1 cup water
1 Tbsp cornstarch
1/4 cup brown sugar
1/4 tsp allspice
pepper

Mix all ingredients and pour over cooked (and shredded or sliced) beef roast. Bake at 325 for 2 1/2 hours or place in a crockpot on low for 6-7 hours.

**This recipe comes from a local "pioneer woman" who makes this every fall for their annual bull sale. This can make a huge pan of barbeque, and it freezes well. Also, I like to toss leftover beef roasts in the freezer and when I have a few, it's nice to take it out and toss in the crockpot for an easy meal.

Crockpot Gooey Chicken Burritos

2 large chicken breasts
12 ounce jar of salsa
1 can cream of chicken soup
1 can diced green chilis
1 1/2 cups grated cheese
1 small onion
A handful of spanish olives (no idea what these are, but they scare me just a little)
2 tbsp of cooking tapioca
Flour tortillas

I have no directions for this recipe despite making it before ... I'm going to assume you mix everything but the tortillas in the crockpot and cook it for 6-7 hours until nice and gooey, then serve it over the tortillas.

**Me thinks this is a recipe from Katy? Perhaps she can enlighten me on the directions part if that's not correct. Again, this is something my husband wouldn't touch with a ten foot pole, but when I forced the kids to eat it when he wasn't around, they devoured it. And if spanish olives are anything like green olives, then double BLECK! Green olives were not meant for human consumption, I'm afraid.

Ranch Chicken

4-5 boneless chicken breasts
1 can cream of mushroom soup
1 cup sour cream
1 pkt ranch dressing
1/4 cup chicken broth

Whisk soup, sour cream, ranch dressing mix and broth in crock pot. Add chicken. Cook on low 4-6 hours. Serve with rice (use drippings in crock pot for gravy).

**I think this recipe came from Cherie? My husband won't touch it with a ten foot pole, too much "cream" in it, but I've made it for the kids, and they thought it was rather tasty.

One less piece of paper floating around the cabinet now!

Homestyle Ribs

4-5 boneless ribs, pork or beef
1 medium onion thinly sliced
1 cup ketchup
1/2 - 1 cup water
1/4 cup brown sugar
1/4 cup cider vinegar
2T worchestershire sauce
1T ground mustard
1 1/2 tsp salt
1 tsp paprika

Place half of ribs in crockpot, layer onion on top. Repeat layers. Combine remaining ingredients and pour over ribs. Cover and cook over low heat 8-9 hours until ribs are tender.

**This is what we had for dinner last night... goes great with green salad, baked potatoes, and banana squash.
