Kansas Caviar

1 can black beans drained
1 can black-eyed peas drained
1 can shoepeg corn drained
1 can tomatoes and green chilis
4 bunches chopped green onions
1 bottle zesty Italian salad dressing

Mix beans, peas, corn, tomatoes and onions. Pour 1/2 to full bottle of the salad dressing over the mixture and refrigerate overnight. The next day, drain off as much of the dressing as possible and add fresh cilantro and hot pepper to taste. Mix well and serve with your choice of scooper.

Crab Curry Dip

Ingredients
1 8 oz. pkg. light cream cheese, softened
1/2 cup evaporated fat free milk
4 oz (3/4 cup) cooked crabmeat
2 Tbs green onion, thinly sliced
2 Tbs minced red bell pepper
1/2 tsp curry powder
1/4 tsp garlic salt
Assorted cut fresh vegetables

Directions
Beat cream cheese and evaporated milk in a small mixer bowl until creamy. Stir in crabmeat, green onion, bell pepper, curry powder and garlic salt. Cover and refrigerate for 30 minutes. Serve with vegetables.

Mom's deviled eggs

6 eggs
1/16 tsp pepper
1 1/2 tsp dijon mustard
1/4 cup salad dressing
1 tsp sweet pickle juice
paprika

Boil eggs, cool, and peel Slice in half, remove egg yolks. Mix yolk with pepper, mustard, salad dressing and pickle juice. Fill egg cavities & sprinkle with paprika.

**Does this really need a recipe? If you are me... it does.

Crab Dips

Number one...
1 package soft cream cheese
1/4 cup mayo
3 tbsp milk
1/4 tsp salt
1/8 tsp garlic powder
dash cayenne pepper or tobasco or Franks Hot sauce, or to taste
1 can crabmeat (or imitation crab from the meat dept, which I prefer)

Mix it up and eat it...

Number two...
8 ounces sour cream
8 ounces cream cheese
1/2 cup finely chopped celery
1/4 cup chopped onions
1 tbsp lemon juice (optional)
1 lb imitation crab meat, broken up

Mix it up and eat it...

Number three...

1 package soft cream cheese
1 tsp lemon juice
1 tsp worchestershire sauce
2 cloves minced fresh garlic (did you know you can buy bottled minced garlic in the produce dept and it's just as good as fresh? In fact, it's better because your hands don't smell like garlic when you are done.)
2 chopped green onions
6 ounces imitation crab meat, diced
1 pinch of salt
1 pinch of ground black pepper

Mix it up and eat it... you can also serve this one warm.

**I love love love crab dip, and my actual recipe for crab dip is to add a little of this and a little of that, making a combination of all three of these recipes.
