Ingredients
1 cup ice cream, any flavor
1 cup sifted self-rising flour
Directions
Butter 6 muffin cups. Preheat oven to 400°. Place ice cream in a small, deep mixing bowl and stir with wooden spoon until softened. Add flour, stirring until just mixed. Spoon equal amounts into muffin cups and bake for 18 to 20 minutes, until a toothpick inserted in the center comes out clean. Serves 6. Muffins may be frozen for later use.
