Danish Pancake puffs... these are cooked in an Aebleskiver pan, or a pancake puff pan like I got for Christmas!
2 Cups sifted flour
3 eggs
1 tsp baking powder, heaping
2 Cups sour milk (I put 2 T vinegar then add milk until it reaches 2 cups)
1 tsp salt
1 Tbl sugar
Separate eggs and beat. Fold in beaten egg whites last. If sweet milk is used, omit soda.
(I just dump everything in the bowl and mix it up and I never sift the flour. But I always used the sour milk - it's not the same without it. Our favorite way to eat them is with powdered sugar.)
