2 c flour
1 tsp ground cinnamon
1/2 tsp nutmeg
1 cup packed brown sugar
1 cup canned pumpkin (or cook & crush one from your patch!!)
1 tsp baking powder
1/2 tsp baking soda
1/2 cup butter
1 egg
1 tsp vanilla
you can also add at this point nuts or raisins, but I REALLY like it w/ choc chips - cause - everything's better w/ chocolate!
Mix evertying together in large bowl - dough will be soft (think *really* thick pancakes) Drop onto cookie sheets by spoonful. Bake at 375 for 8-10 minutes.
Someone also told me that you can also FRY this receipe for doughnuts - but I've never done that before - let me know if you try it - I've actually HAD pumpkin donuts before - and they're delish - little bit of glaze on them - yu-uhm!
