Dr. Harpers Corn Bread

I don't know who's cornbread this really is, I just know we got the recipe from Dr. Harpers wife....
and it's so yummy!  

1 1/2 cups cornmeal
2 cups flour
1 1/2 cup sugar
6 tsp baking powder
1 1/2 tsp salt
2 cups milk
2 eggs
2 Tbsp oil

Mix together and pour into a greased 11x13 pan.
Bake at 425 for 15-20 minutes until toothpick is clean.
Serve with honeybutter.  

Honeybutter

1 cup melted butter
1 1/2 cups honey
1 1/2 cups whipping cream

Melt butter and add honey until nicely mixed.  Let cool.
Beat whipping cream into stiff peaks.
Fold into butter and honey mixture.


Grandma's Banana Bread

1 3/4 cup flour
1/2 tsp baking soda
1/2 cup shortening
2 eggs
1 1/4 tsp baking powder
3/4 tsp salt
2/3 cup sugar
1 cup mashed bananas

Cream shortening. Add eggs and sugar. Add dry ingredients alternated with mashed bananas. Bake at 350 for 1 hour.

You can also add nuts, chocolate chips, or baking cocoa.

Jeana's DA BOMB rolls

Mix & let stand 20 minutes:
4 Tbsp Yeast,
2 Tbsp Sugar,
1 Cup Warm water.

Heat to lukewarm:
2 Cups milk,
2/3 cup butter or margarine,
1 Cup sugar,
4 tsp Salt.

Add to milk mixture:
4 beaten eggs.

Beat 4 Cups flour into liquid mixture. Add yeast mixture. Beat well. Beat in 5 -6 cups flour. Dough will be sticky. Beat / knead for 10 minutes. Cover & let raise til double. Stir down. Can shape into rolls now, or store in covered container for up to 5 days. At least 2 hours before you want to serve, take dough from fridge, shape, place on greased pans, brush w/ melted butter. Raise 1 1/2 hours. Bake at 375 degrees for 10 - 12 minutes. YUM!

Sister Peterson's Whole Wheat (or white) Bread

This recipe makes 6 loaves of bread. See the bottom of post for smaller batches.

1. Turn on oven to lowest setting (170 degrees)
2. In a medium sized bowl, put 3/4 cup warm water, 1 tsp honey or sugar, 3 T. yeast. I like to set the bowl on my oven vent to really get the yeast foaming.
3. Grind your wheat (18-20 cups)
4. When the oven reaches temperature, turn it off.
5. In a Bosch mixer (or Kitchenaid) place the dough hook, 6 cups of water, 2 T. salt, 1/3 cup oil, 1/3 cup honey or sugar, 1 egg, and 3 cups white flour, put the lid on and mix on low.
6. Add 7 cupsof whole wheat flour, one by one.
7. Add the yeast
8. Add 4 more cups of whole wheat flour. Mix five minutes.
9. Turn mixer up to the next setting. Add 4-5 more cups of flour. Check to see if the dough is sticky. If it is, add another cup and mix again.
10. Mix for five minutes.
11. Turn off the mixer, loosen the lid and let raise for 15-20 minutes or until double in volume.
12. Push the dough down into the mixer, turn the mixer on #2 and let mix for 8 minutes.
13. Sanitize the counter. Grease the pans.
14. After 8 minutes, check to see that the dough is not too sticky (if it is, add more flour), otherwise, take the dough out and divide into 6 loaves.
15. Put the dough into the pans and place in the warm but turned off oven to rise for 15-20 minutes. Wheat bread should be at least raised to the level of the edge of the pan preferably a little higher.
16. Pull out the bread pans and turn the oven to 350.
17. When the oven is hot, bake for 28 minutes.
18. Cool on a wire rack and butter the tops when it's done.

For one loaf:
1 1/8 cup warm water (the 1/8 cup is for the yeast and 1 tsp honey)
3 cups flour
1 T honey
1 tsp salt
1 T oil or butter
1 1/2 tsp yeast
1 egg (omit if doing less than three loaves).

Monkey Bread

Ingredients
3 cans biscuits-10 count each
1 cup granulated sugar
1/4 cup brown sugar
1 cup chopped pecans
1 tbsp. cinnamon
1 stick butter-melted

DirectionsPre-heat oven to 350 degrees. Mix the cinnamon and sugars together very well in a bowl. Cut the biscuits into fourths with scissors. Dredge each in the sugar and cinnamon mixture. Put a layer of pecans in the bottom of a well greased Bundt Cake pan. Arrange pieces of biscuits on top of the pecans. Continue to layer pecans and dough. Sprinkle remaining sugar/cinnamon mixture over biscuits, then pour the melted butter over the top. Bake at 350 degrees for 30 minutes. Enjoy!

Toasted Almond Muffins

Preparation Time: 15 minutesServings: 18 muffins
Ingredients
2 1/2 cups all-purpose baking mix
1 1/2 cups (12 fluid-ounce can NESTLÉ® CARNATION® Evaporated Milk
1 cup granulated sugar
1/3 cup vegetable oil
1 large egg
1 cup sliced almonds
1 cup sifted powdered sugar
1 to 2 tablespoons orange juice

Directions
PREHEAT oven to 375° F. Grease or paper-line 18 muffin cups.
COMBINE baking mix, evaporated milk, granulated sugar, vegetable oil and egg in large mixer bowl. Beat on high speed for 30 seconds or until blended. Fold in 3/4 cup almonds. Spoon batter into prepared muffin cups, filling 2/3 full.
BAKE for 15 to 18 minutes, or until wooden pick inserted in center comes out clean. Remove to wire racks to cool completely.
COMBINE powdered sugar and orange juice in small bowl. Spread over each muffin; sprinkle with remaining almonds.

PUMPKIN SCONES

PUMPKIN SCONES
1 tablespoon butter, softened
3 tablespoons sugar
1 egg
3/4 cup mashed cooked pumpkin
2 cups self-rising flour
1/8 teaspoon salt
1/4 cup milkUnsalted butter

Cream butter with sugar until light and fluffy. Add egg and beat until well blended. Stir in mashed pumpkin, flour and salt. Turn dough out onto floured board and knead gently, adding just enough flour until mixture stops being sticky.

Pat dough into 12x4-inch rectangle. Cut rectangle into 2-inch squares. Place squares on baking sheet and brush tops with milk. Bake at 350 degrees 10 to 15 minutes or until raised and lightly browned. Serve with unsalted butter.

Makes 12 scones.

Whole Wheat Bread

2 rounded tablespoons yeast
5 1/2 cups warm water
2/3 cup vegetable oil
2/3 cup honey
1 tablespoon salt
12 to 13 cups whole wheat flour

Add warm water to yeast and let soften for five minutes. Add oil and honey. Stir in about 3 cups of flour, then add salt. Add enough of the remaining flour to make a batter about the consistency of pancake batter, and beat by hand or machine for 10 minutes. Then add remaining flour to a soft, but not overly sticky dough. Turn into buttered bowl and let rise. Shape into loaves, let rise and bake at 350 degrees for 35-45 minutes.

**I have not tried this wheat bread recipe, so I cannot tell you whether or not it is good.

Pikeletts

Pikelets Ingredients
2 teaspoons butter
1 cup of self-raising flour
Pinch salt
2 Teaspoons sugar
1 Egg
1/2 Cup milk

Directions • Melt the butter. • Put it into a bowl with the flour, the salt, the sugar, the egg, about half a cup of milk and the melted butter. Stir it all up until there are no lumps. You may need to add more milk. • Grease the griddle or frypan. Drop the mixture on in spoonfuls. • When the pikelet is bubbly, turn it over and cook the other side

Lemony Zucchini Bread

4 cups flour
1 ½ cups sugar
1 package (3.4 oz) instant lemon pudding mix
1 ½ tsp baking soda
1 tsp baking powder
1 tsp salt
4 eggs
1 ¼ cups milk
1 cup vegetable oil
3 TBS lemon juice
1 tsp lemon extract
2 cups shredded zucchini
¼ cup poppy seeds
2 tsp grated lemon peel

In a large bowl, combine the flour, sugar, pudding mix, baking soda, baking powder and salt.In another bowl, whisk the eggs, milk, oil, lemon juice and extract. Stir into dry ingredients just until moistened. Fold in the zucchini, poppy seeds and lemon peel.Pour into two greased 9x5x3 loaf pans. Bake at 350 for 50-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.Makes 2 loafs.

Mom's Quick Yeast Rolls

Scald 1/2 cup milk
Add:
1/4 cup shortening
2 Tbsp sugar
2 tsp salt
1/2 cup water

Cool and add 1 egg and 1 Tbsp yeast. Beat until dissolved. Add 2 cups flour and beat well. Stir in 1 cup sifted flour. Dough should be soft but not stiff.

Knead well and shape into rolls. Bake in a hot oven 425 degrees for 10-15 minutes.

**Again, if it's bread and it came from my mom, it has to be good!

Janet's cinnamon rolls

4 cups milk
3/4 cup butter
2 cups sugar
5 eggs beaten
1/4 cup vanilla
5 Tbsp yeast
1 cup warm water
1 1/2 Tbsp salt
15 cups of flour, or enough to make dough sticky.

Let rise once and roll into strips about 15x9 inches, 1/3 of an inch thick. Spread with butter and sprinkle with cinnamon and sugar, and roll up. Cut with thread and bake at 375 for 15 -20 minutes.

**Cinnamon rolls, another thing I've never made!

Marlene's famous doughnuts

1 cup boiling water
1/4 cup butter or margarine
1/2 cup sugar
1 Tbsp yeast
1/2 cup lukewarm water
1 tsp salt
1 cup evaporated milk
2 beaten eggs
1 tsp vanilla
6 cups flour

Dissolve yeast in 1/4 cup lukewarm water. In a seperate bowl, mix 1 cup boiling water, salt, sugar, and butter. Add evaporated milk, vanilla, and eggs. Mix well. Stir in yeast-water mixture. Stir in 3 cups flour and beat well. Add another 2 cups of flour and mix well. Save 1 extra cup of flour to roll out dough. Dough will be very soft. Let raise one hour. Roll out on floured board and cut with a doughnut cutter. Let rise 30-45 minutes. Fry at 350 degrees in hot oil until light brown. Drain on rack, glaze adn enjoy.

**I've actually MADE these... after my mom gave me a doughnut cutter and expected me to use it. My only warning is that it makes what seemed like was a million doughnuts. It's a lot of work when you only truly "need" to eat one... or twelve.

And by the way, Marlene is a lady who lives behind me. Many moons ago, she used to make dozens and dozens of these for Halloween... before I lived here, so I've never actually had one of HERS.

German Stollen (Christmas Bread)

Mix:
3 cups warm water
1/2 cup sugar
3 Tbsp yeast

Let yeast work for five minutes.

Add:
4 beaten eggs
3 tsp salt
4 Tbsp oil
9 cups flour

Knead in bread machine for 10 minutes.

Divide dough into 5 portions. Then divide each piece into 3 portions. Roll each piece out to fit a pie pan. Put first circle in pan and spread with melted butter. Sprinkle on nut mixture.

Nut mixture:
1 1/2 cups chopped nuts
1 1/2 cups sugar
3 tsp maple flavoring
4 1/2 tsp cinnamon

Stack 3 layers this way. Stack 3 layers this way. Put a cup in the center and press down slightly. Cut 12 pieces and twist. Rise until double in size. Bake in a 350 degree oven for 18-20 minutes.

**Okay, I don't get this AT ALL... my friend Deanna M. made this delicious Christmas Bread for a homeaking meeting years ago and we all received copies of the recipe. I suppose if you are talented, you can figure out how to make this nice and cute, but I'm not that talented, so I'm terrified to try it (not to mention that my husband is allergic to nuts anyway, and I bet it's not the same without them).

If you've ever made something like this and have some laymans terms for how to roll this, or better yet a picture, send it to me!

Mom's bread

1 cup hot water
Mix with 1 1/2 tsp (or one package) yeast
2 Tbsp oil
2 Tbsp honey
3 cups of flour (white, wheat, or both)
1 1/2 tsp salt
2 Tbsp dry milk

Mom mixes this up in her bread maker, so she just dumps all the ingredients in at once and lets it do it's thing. I do it the old fashioned way, with my kitchenaid and the oven and it works just as well.

**If there is anything my mom knows how to do, it's bake a mean loaf of bread. She's the QUEEN. This is her own recipe she created from her own brain when dad bought her a breadmaker and she didn't like the recipe it came with. She tested it a couple hundred times, adding a little more of this, a little less of that, before she finally got it perfect.
